salad + hummus

happy friday pears!

i’m trying to fuel up today on vitamins, carbs, water and electrolytes because guess what? i’m running the p.f. chang’s rock ‘n’ roll half marathon on sunday! this will be my second half marathon. my first was in 2008 with a time of 2:05 and some change. i desperately wanted to get 2hrs or below, but just couldn’t push it anymore under.

i’m also sad to report that i haven’t trained as much (and as well) as i would have liked to this time around. i still want to get 2 hrs or below, so i’m hoping positivity will push me through! πŸ™‚

moving back to the fuel (aka: food). for lunch today i made a deelish salad with romaine lettuce, carrots, green bell peppers, feta cheese, zucchini and a hard boiled egg. i’m a little on the outs about dressing right now. i love, love, love balsamic vinaigrette, but i’ve had it a wee too much lately. so, i’ve opted for hummus!

it adds a lot of flavor and texture to the salad, plus it adds more protein (something i don’t get often because i’m a pescatarian). you have to try this, trust me it’s yummy. I like spicy red pepper or cilantro jalapeno hummus the best.Β  yes, i’m guilty of having 10 different bottles of hot sauce condiments in my fridge. please don’t judge me. πŸ™‚
