tofu + sriracha

i have a yummy dinner for you pears out there. i’m a pescatarian, meaning i don’t eat meat except for seafood, dairy and eggs. it’s not for an animal rights thing – i just don’t like the taste. plus, it’s more environmental friendly to not eat as much meat. do you even know the carbon footprint of meat processing plants? gah!

so, long story short – i eat a lot of tofu. which is really yummy, i promise. even the boy likes it! of course, he eats meat though and will be making commentaries on this blog about his side of our meals.

moving on, this is what you need for the magic to happen.

and what’s the best thing about this picture? yup, the 2, count them, 2 bottles of sriracha. i’m telling you people, it’s the stuff. i may or may not be addicted. šŸ™‚

first, soak the tofu on a folded paper towel for about 10-20 minutes to soak up excess water. to make the sauce, add sesame oil, sesame seeds, light soy sauce, green onions, red chili flakes and garlic powder in a small bowl. mix well.

cut tofu into 8 cubes and start pan frying with sesame oil. spread the sauce over the tofu.

yum. i’m totally reliving this moment right now. drool.

next, dice the mushrooms, carrots, onions, and celery and saute.

mix the noodles that have been soaked (not pictured) in with the veggies and warm for about 5-7 minutes. also add little baby corn and bag of steamed snap peas and broccoli.

dish plates and serve with wine. and siracha.

we also made healthy brown fried rice, but failed to take a picture. do not fret, twas’ good and will be made again soon.

2 tsp sesame oil

2 tsp red chili flakes

1 tsp sesame seeds

2 T light soy sauce

1 green onion

noodle mixture:

1 package noodles

1/2 cup carrots

1/2 cup green onions

1/2 cup mushrooms

1 can of baby corn

extra-firm tofu – 1 pack

1 pack steam veggies of choice ( i used snap peas and broccoli)

sriracha (!)

probably serves 4-6 people, but with the way the boy and i eat, we were fine with just us!

enjoy. šŸ™‚

p.s. my post-half marathon race recap is coming soon! so much to tell you little pears!
