post-workout salad: hot + sweet

last night, i had an intense speed and agility workout with optimal performance training (thanks opt!) so i decided a smoothie was in order. i used 1 containter of fat-free blueberry yogurt, 5-6 frozen blackberries, 1/4 cup pom juice, 3 diced strawberries, half of a banana (diced) and ice.

i need to get some protein powder. any suggestions?

i also created a new salad – packed with protein and nutrients! it was a great post-workout meal without a lot of carbs. i had carbs throughout the day to fuel me for the opt workout, then packed on the protein after. 🙂 annnnd drank water of course!

first, put one can of black beans (drained) and one can of garbanzo beans (drained) in a bowl. then chop up sweet yellow and orange peppers, some jalapenos (spice!!), baby tomatoes, a cucumber and some onion. i love the combo of the hot and sweet with the jalapenos and peppers. good pearings all throughout this salad.

mix the veggies with the bean mix and add dressing. i used about 2T olive oil and 3T balsamic vinaigrette (but i love my bv!) and also added some garlic powder, salt and pepper to taste and mixed everything together. i added about 1/4 feta cheese to the mix too.

be careful not to mix too much or your beans will get mushed. serve with a toasted corn tortilla and some tapatio and enjoy! i’m definitely going to use avocado and lime next time.

i can’t wait to workout again tonight with the opt gang! it’s lower body and im neerrrvous!

Post-workout protein packed salad

3 sweet yellow and orange peppers
5 baby tomatoes
1 can black beans, drained
1 can garbanzo beans, drained
1/3 cucumber, peeled and diced
1/4 cup onion, diced
2 jalapenos, diced
1/4 cup feta cheese
2 T olive oil
3 T balsamic vinaigrette
garlic powder, to taste
salt, to taste
ground pepper, to taste

drain one can of black beans and one can of garbanzo beans and mix together. dice the ellow and orange sweet peppers, onions, cucumber, baby tomatoes and jalapenos and mix with the beans. add the balsamic vinaigrette, olive oil and garlic powder, salt and pepper to taste. sprinkle with feta.
