it happens to the greatest. i’m not even sure what went wrong. luckily, despite being disheveled, my panini tasted amazing and went great with my stuffed mushrooms on the side.
i started the mushrooms first, only making 4 mini mushrooms. you can double up the recipe if you want to make more. heat the oven to 350 degrees and dice up some onion and garlic. pit the insides of four mushrooms, then dice the stems and insides.
saute the onions with a little olive oil for about 3 minutes, then add garlic for 2 additional minutes. add the mushrooms until wilted. place the mixture in a bowl and mix with feta cheese, parsley and salt and pepper to taste.
it doesn’t look like a lot, but it overfilled my mushrooms! typical stuffed mushroom recipes include breadcrumbs or panko, but i decided to use the insides of the mushrooms for texture instead since i was going to be using enough bread for my panini. stuff the mushrooms and bake for about 20 minutes.
while the mushrooms are cooking, chop your panini ingredients. i used sliced baby tomatoes and jalapenos. such a great pear! i also used gouda cheese, my tilamook white sharp cheddar cheese and a little feta. everything was going as planned.
press in panini maker and wait. it’s so pretty, right?!
i call it panini surprise. so what if i had to eat it with a fork? 😉 all in all, the flavors were amazing and i loved the bits of feta cheese that didn’t get melted. yum! my mushrooms turned out pretty groovy too.
i still wonder what happened though. maybe it was because i very lightly buttered the outsides of the bread. maybe i put too much cheese (like there is really such a thing as too much cheese)?
whatever it was, i’m going to beat it. panini round 2 starts this weekend. this one will be great. 🙂
and i may or may not have picked off all the cheese from the griddle. burnt cheese is just too awesome to waste. am i right or am i right?
stuffed mushroom recipe
1/4 cup onions, diced
1 tsp parsley, chopped finely
1 garlic clove
4 miniature mushrooms
2 T feta cheese
salt, to taste
ground pepper, to taste
set oven to 350 degrees. cut the stems and pit four mini mushrooms, then dice the insides and set the pitted mushrooms on a sprayed baking dish. chop the onion and garlic. saute the onions with a little olive oil on medium heat for about 3 minutes, then add the garlic and cook for another 2 minutes. add the diced mushroom mixture for 1 more minutes, then place in a bowl. add feta cheese, parsley and salt and ground pepper to taste. stuff the mushrooms, then place in the over for about 20 minutes.
