my recap of the mardi gras dinner i made last night will be posted later today. it turned out so great and made me miss the south and all my wonderful friends i met in birmingham.

in lieu of my panini fail the other night, i decided that it was necessary that i conquer this beast.
the boy and i decided to make two different panini’s and split them (props to him for letting us so all vegetarian). the first, we used rye bread (the best) and spread lite butter on the outsides, then added pesto, mozzarella and tomatoes for the inside.
when the boy stuck the sandwich in the panini grill and pressed down, just lightly touching the top of the sandwich, i innocently asked why he didn’t press it down all the way. he said because it would smush the sandwich. then it hit us both, i squished my sandwich before!! to a pulp! poor little fella.
for our second sandwich, i sauteed zucchini and spinach together and roasted red bell peppers in the oven for 20 minutes.
after buttering two more pieces of rye bread, we added the zucchini, spinach, red bell peppers and mozzarella cheese. this was by far the winner! the flavors so great together. we really should have added feta into that sandwich for a mediterranean flavor, but either way, those veggies made the perfect pear.
i also made an orzo salad. it had the orzo, sauteed spinach, red onions, feta cheese, balsamic vinaigrette, olive oil and cracked salt and pepper. i had meant to grab some pine nuts to add to the mix, but forgot. so just a tip if anyone wants a little crunch in it. 🙂
