the other night was such a great mardi gras. no i didn’t go out and lose all my beads – i stayed home and made some cajun spicy shrimp po’boy’s and super fluffy (ok, a little flat), sweet beignets.
after my workout with opt of course. 🙂
i’ve been dreaming of a blackened catfish po’boy from cajun steamer in birmingham, alabama ever since i moved. it was seriously the best friday happy hour treat, ever! now i seem to crave po’boys on a weekly basis so i had to make them for mardi gras.
instead of catfish though, i decided to make some grilled shrimp on my new panini grill. i love that it has multiple uses – who needs a stove, right?
first, i created a cajun seasoning mix adding cayenne pepper, salt, ground pepper, onion powder and red pepper flakes. i dethawed the shrimp in room temperature water then removed their tails. i coated them with the seasoning and a
lot few squirts of tabasco.
while he grilled the shrimp on my grill (!!) for about 3-4 minutes, i prepped the dressings for the po’boy. traditional po’boys have mayo, tomato and lettuce. i got a fat-free mayo and mixed it with some tabasco and cayenne seasoning and the boy said it was pretty much a hit.
i grabbed a bag of malt vinegar and coarse salt kettle chips for on the side because we definitely don’t have hush puppies in arizona. any great recipes you know of?
i had been dreaming of this po’boy all week, even during my workouts. it sounds crazy, but these used to be everywhere in south and i could have it whenever, wherever i wanted. sadly i can’t now, but it’s definitely a good treat to have every now and then.
i also made beignets from jenna’s recipe at eat, live, run. i’m having issues with my yeast though. 😦 i know it’s all trial and error and a learning process, but i want my dough to rise, dangit! they actually turned out like sopapilla’s and still tasted amazing.
we added some chopped strawberries and drizzled honey on top. mmmhh.
