happy thursday pears! last night was a serious feast people. serious.
the boy had family in town, so the roommates and some friends and his family came over and we decided to grill shish kabobs (it was my idea – it was my way of sneaking in veggies!).
veggies included peppers, onions, mushrooms and i also diced up some pineapple slices from the tropical package bittina and i got this past weekend. (we also got a vanilla bean and mint – i want to make mojitos, but any other suggestions on using mint?).
i think the sweetness of the pineapple really made the kabob because its sweet juice was over everything. perfect pearing! 🙂 we tried grilling mangos too, but that was an epic fail!
we also put chicken on some and shrimp on others. i’m not sure what they marinated the chicken in, but the boy made the shrimp a cajun flavor and it was perfect! we grilled corn too with a little
butter salt and pepper.
the boy’s aunt made an amazing pasta salad that had cheese in it – so i fell in love, obviously. and his sister made a really great salad. they love putting pimento olives in their salad. they are so creative! (i got the cilantro-in-the-salad from them too).
i also made a cilantro and lime rice with brown rice (!!) and i fried some potatoes, onions and peppers together. the word on the street was they were spicy. 😉 mmmmmhh.
for the rice, I cooked 3 cups of brown rice, then added cilantro, lime juice, a little lemon juice, garlic, a little bit of water and olive oil into a food processor. when the rice was done cooking, i added the mixture and stirred it all up, then added salt and pepper to taste. 🙂
there may or may not have been a really great pineapple coconut cake. and it may or may not have been so moist and covered in coconut flakes ( i heart coconut flakes). those are just rumors though. 😉
in other news, i’m going to lupe fiasco tonight with my friend marette! 🙂 super excited!
