so, for the next stop on easter, the boy decided he wanted some refreshing cucumber, dill and cream cheese sandwiches (!!). shocking he didn’t suggest any meat with it!
they were super refreshing though and fun to make. i used sourdough and rye bread, cutting off the crusts, then made them into little squares of varying sizes. i even cut out a few to look like little eggs too. 🙂
the spread was made from dill, pepper and fat-free cream cheese. i think it would have been good with some diced scallions though and a little pickle on the sandwich. they were just a little too bland for me. so just some suggestions for you guys. the boy love it though.
