happy friday!! 🙂 the only bad thing is, i have to work sunday to cover a shift for someone, so it’s not really a long weekend. but i’ll get next friday off instead – which i’m excited to have a weekday off!
other than that we start our softball league tonight and i’m so excited. always pitchin’ is going to be the best team ever. 😉 what are your plans this weekend?
so, i’m really (and i mean really) loving pretzels at the moment. i have a new found appreciation for it’s crunch and perfect saltiness. which is exactly what i like to have as a flavoring for salads.
soooo, i have the perfect pearing for you today. drum roll please: this strawberry + pretzel salad. sounds intriguing right? you’ll get addicted, i promise you that.
it’s like putting a crouton in your salad, but with less calories and just the right amount of crunch. sometimes croutons are just too big for me. so the salad was romaine lettuce, chopped walnuts, feta cheese, red onion and strawberries. i also made a strawberry vinaigrette on the side by putting strawberries, balsamic vinaigrette, olive oil, sugar and a little water in a food processor. perfect.
my mom also made shish kabobs. i feel like i’ve had them so much lately! obviously it’s getting to be that season where it’s time to barbecue and sit by the pool. 🙂 she seasoned hers with an asian sauce. mmmhhh. we also had corn and my mom’s veggie rice pilaf!
