stuffed red potatoes

so, it might seem like i have a green thumb. which really, i can’t take the credit. i nurture and take care of the plants and i know things, but the boy has more time to do most of the grunt work. πŸ˜‰

my dad’s pretty much a pro too. he doesn’t plant as much stuff as he used to, but still comes out with a good crop. he gave me these cute little red potatoes this past weekend and i couldn’t wait to make something with them!

don’t they look delish?! the flavors were so perfectley peared together. especially w cheese on top. πŸ˜‰ everything is better with cheese on top.

i have a few more to use for something. what’s your favorite way to make red potatoes? i’ll take it any way as long as it has the skin still – love, love, love potato skins.

red potatoes

ingredients:

6 red potatoes
2 tsp basil
1 green onion, diced
1 tsp paprika
2 garlic cloves
dubliner cheese, grated (as needed)

directions:

fill a medium pot with water and bring to a boil. carefully place potatoes in pan and cook for 15 minutes, or until potatoes are soft. meanwhile, saute garlic and onions in a pan for 2 minutes. place in a bowl and mix with paprika and basil. drain the water from the potatoes and let cool for about 2 minutes. cut lengthwise into the potatoes and scoop out some of the insides, place in the garlic and onion bowl and mix together. place potatoes onto a oven pan, stuff with the garlic and onion mixture and grate cheese directly over the potatoes. broil for about 5 minutes or until cheese is golden.

here is the rest of dinner: cajun grilled tilapia, grilled zucchini and my bell pepper (!)

i’m off work soon and have a ton of errands and hopefully i’ll have time for a run. it’s been so nice outside the past few days – i’m trying to take advantage before it gets sweltering.
