some other cupcakes i made recently were these spaghetti and meatball ones. look super crazy, right? but they were sooo good. photo prob isn’t the best – was in a hurry.
they tasted like peanut butter and jelly! i used the same recipe for the peanut butter cupcake batter and peanut butter frosting as the one with the swirl, except without the chocolate. i piped the frosting and decorated the cupcakes to look like “spaghetti.” and then i made this topping.
1 carton strawberries
1 tsp cornstarch
1 tsp sugar
diced half the strawberries and mix in a food processor. add cornstarch and sugar and process until mixed through. add more sugar if needed. place the rest of the strawberries whole onto the cupcakes, one on each. drizzle the strawberry mixture on top of the cupcakes.

i’m actually having quite the downer day – computer at work locked me out for 2 hours, benefits craziness (!!) and my nook screen is halfway frozen on a page (has this happened to anyone? – help please!). 😦
