Fish Tacos!

Happy Friday! Hope the start to your weekend is going great!

Yesterday our power (and about 80,000 other Mesa-area residents) went out at about 2 p.m. because of an SRP fire that happened. The house was about 90 degrees I guess. So, when I got off work, the boy was at the bar getting a beer and trying to cool off. We ended up eating out so we couldn’t cook the dinner we wanted to, but tonight we will and I’ll share. 🙂 And our power came back on around 9 p.m. last night. Thank goodness!

Remember my post on the fish sticks I was craving the other night and my mention about fish tacos? Well, take a bite out of this:

The boy came home with some lightly breaded tilapia fillets so we went about making fish tacos. At first, I was a little disappointed that they were breaded. I wanted just plain fillets so that I could flavor them how I wanted, but they were actually very, very tasty.

While they baked in the oven, I crisped up some taco shells and we went about making some quesadillas. In them we put cheese, black beans, corn, green bell pepper, tomatoes, jalapenos, green onions and more cheese. They were absolutely to die for.

We had about the same combination in our fish tacos too!

We had an extra tortilla left over and extra fish and fillings so we decided to put it all together and make a stuffed burrito! 😉 What are panini presses for anyways, right?

Also, the boy came home with a gi-normous bag of Doritos for me! It’s one of my downfalls (along with Snickers bars). It was about half the size of me and I can’t wait to eat them all.
