Vegetarian enchiladas

Happy Wednesday everyone!! How was the rest of your weekend? Mine was great, busy with bridal shower stuff (Shelby’s is this weekend!) and working on blog stuff for East Valley Rotaract. Any good eats this weekend?

I recently had these babies! Vegetarian enchiladas.

We used tons of fresh veggies, including zucchini, green onions, cilantro, tomatoes and mushrooms. I also added some black beans for a little protein. Get it in where you can!

We sauteed all the veggies first, then rolled them up in some whole wheat tortillas, added some green enchilada sauce, sprinkled some cheese and, the rest is history. 🙂

On the side we had some chips and salsa and some Spanish rice. It was heaven and so simple. So please, make this tonight! 🙂 You might thank me. AND, if you have to add meat, that’s okay.
