Vegetarian egg boat baguette bake

Are you ready for an absolutely amazing breakfast for your Friday? It’s definitely a treat.

This breakfast baguette made my day. My night. My everything. It was glorious. I love me some breakfast foods, though. Eggs are a forte in everything I eat, so when I saw this idea on Pinterest, I really went with it.

The boy and I grabbed two baguette’s from the local grocer and added eggs, veggies and cheese. The eggs soaked into the bread adding flavor to it, and I’m not afraid to say that I ate my whole baguette. Yup. I can’t even describe it.

{We added scallions, spinach, tomatoes and hot cherry peppers}

{Clear out the center of the bread like a ‘V’}

{Pour all ingredients inside baguette’s}

{Bake for 20-25 minutes at 350 degrees.}

{Wait for breakfast (or breakfast for dinner) and seriously enjoy.every.bite.}

Ingredients:

2 French baguette’s

3 eggs

3 scallions, diced

2 roma tomatoes, diced

1/4 cup sharp cheddar cheese

1/4 cup spinach, chopped

3 hot cherry peppers, diced

salt and pepper, to taste

Directions

Heat oven to 350 degrees. Cut out ‘V’s” into baguettes, leaving an inch at both ends. Take out the extra breading (we toasted our extra). Mix eggs, veggies, cheese and salt and pepper together in a bowl. Add mixture to the middle part of baguette. Bake for 25 minutes or until egg is firm and bread is golden brown. Cool for 5 minutes.
